Aloha from the Fleetwood's Pastry Department!
We are proud to announce the beginning of a new pastry program here at Fleetwood's on Front St.! My name is Lucas Parsley, and I have stepped into position as Pastry Chef - I am thrilled to be apart of the team here on Front St. As we roll into Fall and the approaching holidays, a lot of exciting changes are taking place.
For over the past year, Executive Chef Eric Morrissette and his culinary team have built a fantastic bread program. Baking fresh foccacia, baguette, and brioche hamburger buns in house, every night, truly a unique thing to find here on Maui. I am now taking this approach and applying it to our new pastry menu; Cakes, brownies, and custards are all baked in house, daily.
Utilizing a small-batch mindset, we are creating a product that is fresh and homemade. My goal is simplicity, executed with a fine touch. We want the desserts to feel warm and familiar, but have an edge of creativity and style. Of course, there will also be a little bit of Aloha spirit thrown in as well! We are using local Maui pineapple, bananas, strawberries, and fresh clove, across our menu. I am working in conjunction with several farms to bring the freshest and most exotic fruit into our kitchen. Local lilikoi (passion fruit) and starfruit have made appearances recently with macadamia nut cheesecakes, while a classic Apple Cobbler with Almond Biscuits, baked to order, brings us back to holidays with family and friends.
